Decent Knife Mar 17, 2010 I was pleased with the quality of this knife. I orginally bought it to cut large squashes and watermelons...so far, so good!
A decent knife, but there are better options out there if you want ultimate sharpness Feb 24, 2010 I have this knife as part of a 15 piece Pro-S set. There are a lot of positives to this knife, and taken in context of a German blade,... it performs quite well. First, it does not have a large bolster that extends down to the blade's edge. This makes sharpening MUCH easier and allows you to used th whole blade. The tip lets you do detail work well and I never use a paring knife anymore. The blade thickness is pretty constant over the entire blade (from the edge to to the spine) at about 2mm. Its not nearly as wedge shaped as Henckels Chef knives which tend to split hard vegies rather than cut them.
The edge is ground reasonably sharp from the factory, but its by no means a razor edge. A good diamond stone, paired with a ceramic or Japanese waterstones can put a much nicer edge than the factory one.
So why only 3 stars? First, the blade, while thin by German standards, is postively chunky when compared to Japanese knives. Not just Shun, but more specifically Japanese knives, from Japan which have blades that are just as stiff, but literally a fraction of the thickness near the edge. This translates into superior cutting and less force needed.
Second, this knife does not hold an edge for very long. I can get a shaving sharp edge on the knife, but it won't keep it for longer than a few weeks. Even when wiping dry the blade after each use and hand washing only, the edge just won't hold
Thrid, its just not quite long enough. Its fine for chopping most thing, but long veggies, and meat require a sawing action or two cuts which is not ideal.
Lastly, the granton scallops are useless. Other reviewers state that food does not stick to their blades. They alwasy stick to mine.
In all, you could do a lot worse, but quality japanese knives can cut circles around the Heckels Santoku. If you are buying a single knife and are looking at this blade, do yourself a favor and look at some Tojiro DP knives or Hiromoto knives and you will never ever look back... and all your friends, neighbors, and family's knive will feel like cheap butter knives from that point on.
Great Knife Feb 02, 2010 Finally splurged for the "grown up" knives. It is awesome. Sharp right out of the box. Both my husband and I find the knife extremely comfortable to use. We had a cheap chinese made Santoku knife which we immediately tossed into the bin after using this new knife. Well worth the price.
Henckels Review Sep 12, 2009 I have always wanted a Henckels Twin Pro series Knife, and I'm glad I finally made the purchase. My buddy has three of this series, and I've had the pleasure of using them. My wife uses this knife almost daily, and with a light stropping on leather every few weeks (Just a leather belt turned upside down, like the barbers' do with their razors), it stays sharp. I liked it so much, I purchased another one for a gift. I can't wait to get the 8 inch chef's knife and a Henckels knife block.
Superior product! Mar 04, 2009 I have owned a full set of Henckels "twins" knives for years. This santoku knife has become my favorite for all sorts of tasks. It comes razor sharp from Henckels and is easy to maintain the edge. I hit it with a few strokes on the steel and it's like a razor, again. It's a superior knife and is well worth the money. Just make sure you get the "Twin Pro" and not the much cheaper style.
