Beautiful cakes! Jul 16, 2010 This works perfectly! I own two different Nordic petit fours pans and have never had a single problem.
Yes, they do come out tiny, but you really should realize that just from seeing the name petit four.
To get the best cakes, use a tight crumbed cake recipe. Pound cake works great for petit fours. Since slicing would ruin these pretty cakes, try injecting fillings into the center. Ganache, frosting, and jam are great fillings.
Use a icing the cakes, freeze them four a couple of hours until firm. Dip the petit fours in brightly colored poured fondant or chocolate to coat and place on a cooling rack to dry.
Petit fours are a lot of work, but totally worth it.

Warning: Inaccurate Description Nov 27, 2009 The Product Description says that the pan makes 20 cakes and has a 10 cup capacity, meaning that each cake is 1/2 cup. This is WRONG. The pan makes 20 cakes, each a 1/10th cup size. That means the entire pan has a 2 cup capacity!!! If you're expecting to make more than bite-sized cakes this is NOT the pan for you. These cakes are TINY.
Otherwise the pan is the usual heavy duty solid Noric ware heavy cast aluminum pan with a non-stick surface. There are 4 different pretty flower cake designs. Unfortunately the one I received had a weird black residue on the pan that didn't come off.
