Surprisingly essential Feb 05, 2026 A wide 2 qt hybrid between a saute pan and a pot... perfect for stir fry side dishes. I love the hard anodized (but not "non-stick") Calphalon surface, and this pan is no exception. A great complement to an "everyday pan" which is more flat -- it can handle, and reduce, a fair amount of liquid.
One Star because I expected better Jan 25, 2026 This is not the only Calphalon pan that I own, so I know its quality. And after reading all of the reviews, I'm wondering if they are having problems with consistent quality control.
I bought this pan because I need a nice chef's pan, and the price was right. After reading the information on the Calphalon website (aka "propaganda"), I figured out that I needed to treat it with kid gloves before its first use. I then cooked my usual eggs over easy, which turned into scrambled brown egg bits because they stuck like super glue. I cleaned it out using a nylon scrubber, and tried again. Same result, even though I used a bit of butter. And cleanup is not easy. A scrubby pad and Barkeeper's friend finally got it clean enough to put in the cabinet, where it'll probably stay.
It's not just that it's being touted as a nonstick of sorts, but it sticks worse than any of my stainless, enameled, or iron cookware! My cheapie T-fal Professional Total Non-Stick 8-Inch Sauté, Black (similar size, but sides aren't as deep, which is why I bought the Calphalon) does a far better job than this does. And that's what rankles. Calphalon says that with their technology, we can enjoy nonstick performance and still be able to use the same tools that we'd use on regular cookware. They lie.
It's a good-looking pan, but I'd do a little more shopping before purchasing their "Infused" line. For me, it's a complete waste of hard-earned money.

Sticks when making scrambled eggs Aug 24, 2025 If you really need a non-stick pan, this is not the pan to get. The non-stick surface does not work very well with heat and no amount of oil will prevent sticking. Scrambled eggs, browning ground beef, or even just preparing some garlic in oil. It all sticks. The good thing about this pan is that you can scrub the heck out of it and the non-stick coating will not come off.
Calphalon One Infused Anodized 9" Chef Pan Apr 19, 2025 I own this product and use it more often than I would a similar size fry pan. Great for browning or making eggs, also for toasting spices. Calphalon One Infused Anodized is the best.
It works but.... Oct 21, 2025 This pan works well but it's too hard to clean, and only half of the handle stays cool, it's very comfortable though.
